Our recipe for savory oatmeal porridge
80g oat flakes
420ml chicken broth
40g fresh mushrooms
A few spinach leaves
Bring the chicken broth to a boil in a saucepan. Pour in the oatmeal. Reduce the heat and cook for ten minutes, stirring regularly.
Salt, pepper. When the liquid is absorbed, season with a little paprika. Taste and adjust the seasoning if necessary.
Pour the hot porridge into a deep plate or bowl. Add pan-fried mushrooms, raw spinach leaves, a soft-boiled egg (cooked for 6 minutes in boiling salted water) and a few shavings of pecorino.
