Ingredients for 2 people:
For the marinated chicken:
- 300g chicken cutlet
- 1 pot light Greek yogurt
- Juice of 1/2 lime
- 1 tbsp masala spices
- 1 piece of ginger
- 1 clove of garlic
- 10g ghee
- Salt
For the masala sauce:
- 400ml of tomato coulis
- 1 pot light Greek yogurt
- 1 piece of ginger
- 1 tbsp masala spices
- 200ml of water
- 1 onion
- 10g ghee
- 1 pinch of cayenne pepper (optional)
- Coriander/parsley and cashews for dressing
- Salt
Steps :
1- Mix the previously diced chicken with the Greek yogurt, lime juice, masala spices, garlic, ginger and salt. Reserve in the fridge for at least 1 hour.
2- In a deep frying pan, melt the ghee over high heat then grill the chicken. To book.
3- In the same pan, melt the ghee again and sauté the minced onion and ginger.
4- Add the masala spices, cayenne pepper, tomato coulis and water. Allow the mixture to thicken then add the chicken and Greek yogurt.
5- Add salt and simmer for ten minutes over low heat.
6- Serve with a few sprigs of coriander or fresh parsley and cashews.
