🥄 For about fifteen falafels:
300g dried chickpeas
3 tbsp orange sweet potato flour
1 bunch of flat-leaf parsley
1 spring onion (or 1 yellow onion)
2 cloves garlic
1 tsp salt
1 tsp ground coriander seeds
1 tsp ground cumin seeds
1 tsp chilli powder
1/2 tsp baking soda
3 tbsp olive oil
🥣For the sauce
1 pot of Greek yogurt
3 tbsp sesame puree
The juice of a lemon
Salt and pepper
📝Steps:
1- Soak the chickpeas overnight in cold water.
2- Drain the chickpeas, place them in a blender with all the ingredients (except the olive oil). Mix everything until you obtain a homogeneous and slightly grainy paste.
3- Form balls and place the falafels on a baking sheet lined with baking paper.
4- Drizzle the falafels with olive oil and bake for 20-25min at 180°C. Flip the falafels halfway through cooking. They should be golden and cooked through.
5- Meanwhile, prepare the sauce.
