1 small onion
1 clove of garlic
1/2 red pepper
1 tbsp red curry paste
1 tsp coconut oil @nutrimsucle
120g chicken cutlet
A few unsalted peanuts
200ml water (or coconut milk)
basmati rice and broccoli.
1- Cook the basmati rice and broccoli in salted boiling water.
2- Chop the onion, garlic and red pepper. Preheat the coconut oil in a frying pan and sauté for 2 to 3 minutes.
3- Add the chicken cut into small pieces and fry for another 3 to 4 minutes.
4- Add the curry paste and the water (or coconut milk) and simmer for 5 minutes until the sauce thickens.
5- Add some unsalted peanuts, and serve immediately with basmati rice and broccoli.
