Discover our delicious recipe for citrus mackerel with chickpea salad!
📝 Ingredients for 4 people:
- 4 gutted mackerels
- 1 organic lemon (zest and juice)
- 1 organic orange or grapefruit (zest and juice)
- 1 tbsp olive oil
- 2 celery stalks
- 1 broccoli
- 1 onion
- Coriander seeds
- Salt and pepper
- 400g cooked chickpeas
- A bunch of parsley
- 1 red onion
- 1 tbsp olive oil
- The juice of a lemon
- Chili flakes
- Salt
🥄 Preparation:
1- Remove the lemon and orange zest. Cut the zest into sticks and blanch them for 3 minutes in boiling water. Drain them and then rinse them with cold water.
2- Brown the onion in olive oil. Add the citrus zest, citrus juice, celery, broccoli, coriander seeds, salt and pepper. Let simmer for 5 minutes.
3- Place the mackerel in a dish covered with baking paper. Pour in the vegetables and citrus juice then bake for 15 minutes at 200°C.
4- Meanwhile, prepare the salad by mixing all the ingredients.
5- Serve immediately.
