Ingredients for 2 people:
For the marinated chicken:
- 300g chicken escalope
- 1 pot of light Greek yogurt
- Juice of 1/2 lime
- 1 tbsp masala spices
- 1 piece of ginger
- 1 clove of garlic
- 10g ghee
- Salt
For the massala sauce:
- 400ml tomato coulis
- 1 pot of light Greek yogurt
- 1 piece of ginger
- 1 tbsp masala spices
- 200ml of water
- 1 onion
- 10g ghee
- 1 pinch of cayenne pepper (optional)
- Coriander/parsley and cashew nuts for garnish
- Salt
Steps:
1- Mix the previously diced chicken with the Greek yogurt, lime juice, masala spices, garlic, ginger and salt. Refrigerate for at least 1 hour.
2- In a deep frying pan, melt the ghee over high heat and then grill the chicken. Set aside.
3- In the same pan, melt some ghee again and brown the chopped onion and ginger.
4- Add the masala spices, cayenne pepper, tomato coulis and water. Let the mixture thicken then add the chicken and Greek yogurt.
5- Add salt and simmer for about ten minutes over low heat.
6- Serve with a few sprigs of fresh coriander or parsley and cashew nuts.
