Our protein pancake recipe with sweet potato flour

📝 Ingredients (for 5 pancakes)

• 40g egg protein⠀

• 75g sweet potato flour⠀

• 1 egg

• 230ml hazelnut milk

🥄 Preparation

1. In a mixing bowl, mix the powders. Add the egg then the vegetable milk, mixing as you go. We obtain a fluid paste.⠀

2. On a crepe maker, with a knob of butter (or other fat of your choice), spread a ladle of dough. Cook over low heat for about 1 minute on each side.

3. To preserve their softness, cover the pancakes with a clean cloth while waiting for service.

Here as a topping: 2 squares of melted dark chocolate and strawberries.
