Our recipe for tortillas made with sweet potato and egg protein
▪ 100g sweet potato powder
▪ 50g of egg protein
▪ 100g of 5% Greek yogurt
▪ 1/2 tsp yeast
1- Mix all the ingredients until a homogeneous paste forms.
2- Form 4 balls of equal size.
3- Form the tortillas by placing a ball of dough between two sheets of baking paper, then roll it out using a rolling pin.
4- Preheat a pan over low heat, place the tortilla then cover the pan. Cook just one side for around ten seconds.
5- Cover the cooked tortillas with a cloth so that they do not lose their flexibility.
