Recipe: sweet potato protein carrot cake
Our recipe for a Carrot Cake with Sweet Potato and Protimuscle
📝 Ingredients (for 6 slices)⠀
▪️ 100g sweet potato flour⠀
▪️ 1 carrot (~100g)
▪️ 35g Protimuscle Vanilla
▪️ 2 tsp cornflour
▪️ 1 teaspoon cinnamon powder
▪️ 3 eggs
▪️ 1 tbsp maple syrup
▪️ 3 tbsp almond milk
▪️ 1 packet baking powder⠀
▪️ 10g pecan nuts ⠀
⠀
Icing:
▪️ 100g curd cheese 0%.
▪️ 15g Protimuscle Vanilla
▪️ 10g pecan nuts
🥄 Preparation
1. Preheat the oven to 180C
2. Grate the carrot and chop the pecans.
3. In a mixing bowl, combine all ingredients (except glaze) and stir in the carrot and pecans.
4. Pour the batter into a cake tin and bake for 25min. ⠀
5. Allow to cool. Meanwhile, mix the cottage cheese and Protimuscle. ⠀
6. Spread the icing on the cake and sprinkle with chopped pecans.⠀
